Prepare the Pork Fat: Cut the pork fat into small cubes.

Add Onion (Optional): If you want to add onion, dice it finely and add it to the shkvarki about 5 minutes before the end of frying. Fry until the onion is golden.
Season: Salt the shkvarki to taste and mix well.
