1 Heat the oil in a large pan over medium heat. Add the chopped onion and cook until softened.โ€จ 2 Stir in the paprika and thyme, then add the rice and cook for a couple of minutes until the rice is coated with the oil and spices.โ€จ 3 Pour in the white wine (if using) and let it simmer until mostly evaporated.โ€จ 4 Add the canned tomatoes and chicken stock.
